Banana ice cream is super simple and fast but you do need a good heavy-duty blender. If you use a cheap one, you’ll overheat, & possibly burn out, the motor.
- 2 large or 3 small frozen bananas*
- 2 or 3 glugs of nut milk (I prefer hazelnut)
- 1 T vanilla (optional)
- 1/2 c. berries (optional)
Put everything together into a high-speed blender and pulse until broken down, then blend until smooth and creamy like ice cream
Voila! Your 3 servings of fruit (and possibly also your serving of berries) in dessert form! Perfect for a summer evening.
*When freezing bananas, always break them up into chunks. Otherwise, you’ll never be able to blend them. Also, be sure to wait until they’re rock hard. Otherwise, you’ll have a soup rather than an ice cream. After a couple of misses, I now always keep a few bananas in the freezer so I know they’re ready to go.
